As the name suggests you dig a pit into the ground and add various woods and carboniferous materials.  The pots are placed in the pit and covered with wood.  I have used Ferric chloride on some of the pots to give the rich orange/red hues. 

The pit is then set alight and left to burn away over night.  Once cooled you keep your fingers crossed you and open the pit.  Here are some of my wares from my recent pit firings
